Maast-o Laboo is an ultra fast and simple recipe that you can literally whip together in just a few minutes. It’s vibrant pink color is a fun addition to your table and the flavor is earthy yet bright. A store bought shortcut makes this dish easy to make during the week or when entertaining. Served with crackers or crudités as an appetizer or along side delicious Persian meals, Maast-o Laboo will leave a lasting impression.

I love getting cooked and peeled beets from the produce section. I typically have at least 1 package in my fridge at anytime for potential salad toppings or side dish to a meal. I also always have plain yogurt in my fridge as well, it’s used a lot in Persian cuisine and I like adding them to homemade popsicles for an additional protein punch.

The bright red beets can stain so consider wearing an apron, and rinse your hands soon after you are done so your fingers don’t get stained. The recipe is simple, basically grate the precooked/peeled beets into a bowl and mix with the remaining ingredients. It’s bright pink color is vibrant and fun. Enjoy at your next dinner party or happy hour!

Ingredients

  • 8 ounce package of cooked and peeled beets, grated
  • 1 cup plain yogurt, full fat preferred
  • 1 tablespoon white wine vinegar
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Grate the cooked beets on a box grater into a medium sized bowl.
  2. Add remaining ingredients and mix well.
  3. Enjoy!

Notes

The cooked and peeled beets are typically found shrunk wrapped in the produce section.

Serve as an appetizer with pita bread, crackers, or vegetable crudite.

Serve as a side dish to Persian rices, stews, and kababs.
